SUMMARY: The Kitchen Line Supervisor is responsible for assisting in the daily operations of the main kitchen, focusing on the broiler station, food preparation, and culinary staff supervision. This role supports the Executive Chef and Sous Chef in delivering exceptional dishes while maintaining food costs and quality standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Supervise kitchen staff involved in the daily preparation of soups, sauces, specials, banquets, and buffets, ensuring adherence to standardized recipes.
- Assist in maintaining the security of kitchen equipment, food, supply inventories, and recipe books.
- Support the development and enhancement of food products presented to guests.
- Maintain standards of quality, consistency, cost, eye appeal, presentation, and flavor of food according to Sardine Factory Standards.
- Ensure proper staffing for maximum productivity and high standards of quality; assist in controlling food costs.
- Maintain quality and consistency in food delivery and standards.
- Ensure all goals are geared toward exceeding guests’ expectations.
- Provide supervision and training for kitchen staff, including scheduling, coaching, and performance reviews.
- Operate with integrity and commitment to continued growth.
- Review staffing levels to ensure guest service and operational needs.
- Accept responsibility for the health, safety, and welfare of guests and employees.
- Support strategies and programs to achieve and exceed departmental goals.
- Assist in maintaining a positive work environment and relationships with team members and vendors.
- Support safe work habits and contribute to a safe working environment at all times.
QUALIFICATIONS, SKILLS & ABILITIES:
- Previous experience in a fine dining restaurant/kitchen, with specific expertise in broiler cooking.
- Ability to motivate and lead employees.
- Demonstrated ability to interact with customers, employees, and vendors.
- Strong attention to detail and fine dining restaurant kitchen knowledge.
- Ability to proactively prioritize needs and effectively manage time and resources.
- Ability to work a flexible schedule that may include evenings, weekends, and holidays.
- Ability to resolve problems and conflicts in a diplomatic and tactful manner.
- Ability to multi-task, manage interruptions, establish work priorities, handle stress, and effectively function in a fast-paced environment.
EXPERIENCE & EDUCATION:
- Previous experience as a Kitchen Line Supervisor or similar role.
- High school diploma or equivalent required; culinary training or certification preferred.
LANGUAGE SKILLS:
- Ability to read, comprehend, and provide instructions in English, both written and verbal.
- Bilingual in Spanish is a plus.
CERTIFICATES & LICENSES:
- Must provide valid documentation to work in the US.
- Must have a valid Food Handler Certificate.
