Job Purpose
The Culinary Manager supports management in providing a friendly, helpful and knowledgeable kitchen crew that goes above and beyond at all times. Supervisors are part of a fun, fast paced environment and will have multiple responsibilities from guest interaction, to expediting orders, to hands on cooking, assisting in the day-to-day operations of a Timbers Bar and Grill ‘back of the house’ operations.
Essential Functions
- Provide leadership and direction for team members and oversee all kitchen operations in accordance with Quality Services and Cleanliness Standards (Q.S.C.).
- Always conduct yourself in a manner that reflects a positive and professional image.
- Skillfully and knowledgably work each kitchen station.
- Follow all Health and Safety regulations.
- Works productively as a team, assisting all guests’ and team member’s needs and inquires.
- Communicates on a consistent basis with management, keeping them abreast of all department activities.
- Works closely with management team to ensure that all products comply with set forth specifications and cost controls.
- Must maintain a high standard of personal grooming and follow all uniform guidelines per your position and company policies.
- Regular attendance should be dictated by Culinary Supervisor’s understanding of job related duties and commitment to the company (i.e. should be available for all shifts in department to see on a weekly basis, VIP events, usual business demands, weekend nights unless attending other pre-planned events).
- Must possess a valid driver’s license and maintain adequate auto insurance coverage while driving on company business.
- Performs all other job related job duties as assigned.
Operational Duties and Responsibilities
- Assists in the day-to-day operation of the restaurant.
- Regularly restocks all kitchen supplies and food items required for service.
- Properly labels and dates all products to ensure safekeeping and sanitation.
- Maintains an exceptional menu knowledge and attention to detail with plate presentation.
- Must have knowledge of all food and beverage items including but not limited to ingredients, cooking methods, preparation, distillation methods, daily specials and pricing.
- Ensures food quality is superior and take action to correct any irregularities.
- Assists in ordering and receiving of merchandise to ensure proper quality, quantity and price.
- Assists in establishing vendor files for the timely ordering of all consumables and operating supplies.
- Practice and observe safety rules and regulations and ensure team members reporting to you do so as well.
- Prepares all required food items meeting all established portion and presentation standards.
- Assists in ensuring that the entire facility is always prepared, stocked, clean safe and ready for scheduled operation.
- Regularly checks all areas to ensure the highest levels of cleanliness and maintenance are achieved.
- Assists with the responsibility for maintaining assigned level of Q.S.C. on all inspections as set by the company.
- Assists in establishing and conducting all formal and informal training programs for all staff to assure the highest levels of competency are achieved.
- Responsible for reporting all suspicious persons and actions as well as hazardous or unsafe conditions to the company.
- Assists with the responsibility for recruiting, hiring, training and counseling in accordance with policies and procedures set forth by the company.
