THE OPPORTUNITY:
The Executive Banquet Chef is responsible for executing the culinary experience for banquet guests at Moonlight Basin. They are responsible for all BOH banquet operations including menu planning, provisioning, food preparation, sanitation, and staffing. The position demands creativity on a daily basis, excellent communications skills, and the ability to maintain the highest of culinary standards.
WHAT YOU WILL DO:

Works closely with the Catering & Events team to execute the event strategy and focus on meeting and exceeding departmental and company goals.

Reviews Banquet Event Orders (BEOs) daily and makes notes of any changes.

Briefs the culinary associates daily about the current and upcoming events.

Supervisors and coordinates all activities of the banquet culinary associates who are engaged in food preparation.

Lead, mentor, and develop the culinary team, fostering a culture of continuous improvement.

Identifies the developmental needs of culinary associates and provides coaching and mentoring to improve their knowledge and skills.

Collaborate with culinary leadership to train and educate team members, enhancing their food knowledge and service skills.

Understands the guest expectations related to food quality and presentation and ensures culinary associates strive to meet or exceed expectations and help build guest loyalty.

Interacts with guests to obtain feedback on product quality and services levels.

Effectively respond to and manage guest problems and complaints.

Ensure compliance with all local, state, and federal health regulations, and trains associates on the proper handling and temperatures of all food products.

Establishes the day’s priorities and production and preparation tasks for the banquet associates.

Teach employees the importance of consistency in preparation and presentation of food.

Ensure the level of quality, portion control, and plat presentation adhered to consistently and meets Moonlight Basin’s exacting standards.

Oversee Banquet BOH ordering and ensured banquet invoices are approved and coded accurately and timely.

Manage systems and processes that ensure top product quality and presentation, proper food cost management, food safety and sanitation standards, waste minimization, and other initiatives at the discretion of the Culinary Director or Director of Food & Beverage.

Create and maintain strong relationships with our members, employees, and vendors.
KEYS TO SUCCESS:

Minimum of 6 years hospitality experience.

Minimum of 3 years of banquet leadership experience in a similar establishment.

High school or equivalent education required. College degree or culinary equivalent preferred.

Experience working with seasonal employees including international students and workers, is helpful, but not required.

Self-motivated to meet deadlines, manage priorities, communicate challenges, and work with minimal supervision in a fast-paced environment.

Ability to complete tasks in a fast-paced, sometimes stressful hospitality environment with unpredictable business levels.

Have vison, be a creative thinker, and the ability to establish a consistent concept for each catering and event experience.

Able to coach and retain junior employees; build relationships quickly; and foster a team-oriented work environment.

Excellent guest recovery skills.

Must be willing to work overtime, weekends, and holidays as needed during peak periods.
