With our recently-completed “Alimentari” expansion of the highly successful Cossetta’s, retail market, eatery and “Eventi” Catering, as well as the introduction of our new Pasticceria and rooftop restaurant “Louis Ristorante”, we are always searching for an experienced person in the General Manager position to grow with our new expansion and exciting company.
Job Purpose:
Accountable for the overall coordination and management of the restaurant department. Responsibilities include profitability, service, quality, leadership, production and research.

I. Leadership
1. Leads and directs 40 to 60 employees.
2. Assists in providing clear direction and establishing performance expectations to achieve continuous improvement and increased productivity.
3. Adapts to changes in direction and contributes positively to maximize the success of the company.
4. Leads by example, nurtures team concept, and promotes Cossetta company culture at all times.
5. Responsible for recruiting, interviewing and providing primary recommendations on restaurant employee selection.
6. Manages department employee performance which includes evaluation, recognition and performance correction.
7. Coaches, trains and develops shift managers, supervisors and department employees.
8. Demonstrates initiative and performs all activities as business deems necessary.
9. Controls and coordinates the activities of all employees who prepare or serve food.
10. Provides instantaneous direction to employees on quality/sanitation issues.
11. Provides input to appropriate persons on employee performance in all food service operations.
II. Service/Quality
1. Provides, and requires from all Cossetta employees, a world class level of customer service and satisfaction.
2. Monitors and ensures restaurant food and beverage preparation and presentation to maintain consistent quality to established standards.
3. Reviews, identifies and analyzes all measurements of food product quality in order to prevent or resolve all customer food concerns or issues.
4. Ensures the restaurant facility’s appearance, equipment, and maintenance conform to company standards.
III. Finance/Administration
1. Oversees all functions associated with attaining or exceeding the department fiscal budget.
2. Recommends monitors and assists in the control of departmental expenses (e.g. labor, materials, and supplies.)
3. Monitors retail activity of menu items, recommends potential new products to satisfy profit objectives and market conditions.
4. Provides information necessary to plan, project, and coordinate departmental operations.
5. Prepares and adjusts restaurant employee work schedules for designated positions; assigns rest breaks and adjusts staffing levels to meet department needs; makes scheduling recommendations.
6. Makes recommendations regarding new revenue producing/cost controlling methods and merchandising techniques.
7. Completes and submits daily reports and other administrative paperwork.
8. Participates actively in the execution of special events (e.g. Festa!) and serves on various committees.
9. Performs monthly physical inventory and completes assigned departmental preventative maintenance.
10. Protects confidential Cossetta information (e.g. recipes, techniques, financial data, etc…)
11. Adjusts and approves employee time keeping records.
12. Ensures all customer returns and refunds comply with company policy/procedure.
IV. Operations
1. Knows oversees and performs all duties and responsibilities of all food service operations.
2. Enforces and adheres to all established work rules, safety regulations, and company policies/procedures.
3. Provides information necessary to analyze and evaluate sales/profit data and product success.
4. Monitors departmental vendors for service, product quality, and competitive pricing; makes appropriate recommendations.
5. Ensures all restaurant closing and building security functions are performed.
6. Works with the chef and other managers on the introduction and implementation of new/improved menu and seasonal items.
7. Ensures security of company property and grounds; conducts inspection of facility and grounds; takes corrective action as needed.
