I. Position Summary
Assisting AKM and KM and cooking, preparing, and serving the freshest Tiki Bar recipe items using a variety of utensils and equipment while ensuring safety and sanitation standards
II. Job Functions

Opening kitchen and closing kitchen without supervision

Maintaining sanitizer buckets in BOH (filling, testing, and distributing)

Ensuring all equipment is turned on and working properly (fryers, grills, flat top, hoods, etc.)

Heating items to proper temperatures to ensure the line is ready to go for a smooth service period

Continually ensuring correct temperatures and understanding methods for holding and reheating
-
Understanding and complying with standard portion sizes, cooking methods, plate presentation, quality standards, and kitchen policies

Assuming 100% responsibility for quality of products served

Completing daily temperature logs in Hot Schedules
-
Maintaining walk-in and kitchen cleaned and all food labeled and put away appropriately in clean containers

Ensuring food is cooked and delivered within 12 minutes for lunch and 16 minutes for dinner

Processing incoming tickets and modifications
-
Preparing foods using a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment

Ability to work proficiently

Assisting with kitchen operations (closing, cutting employees) when kitchen manager is out

Assisting with produce and commissary ordering as needed

Operating and maintaining clean kitchen equipment following all health and safety guidelines

Reviewing menus prior to preparation of food

Detailed knowledge of prep and menu items

Coordinating food service with other departments as necessary

Being aware of safety and sanitation to maintain a clean and stocked prep and kitchen area and equipment following all health and safety guidelines
III. Job Requirements

Company required certification cards

Ability to perform quickly and efficiently in a fast-paced work environment

Must be able to communicate clearly with managers, kitchen and dining room personnel

Ability to climb, lift, reach, bend, stoop, and frequently lift at least 40 pounds
-
Must be able to stand for up to 10 hours in hot, wet, humid and loud environments
-
Compliance to any reasonable request by management
