**Summary**
The Executive Sous Chef at Brush Creek Ranch plays a pivotal role in leading culinary experiences for our guests, including cooking classes and other interactive culinary activities. This position supports the Executive Chef in overseeing all culinary operations and ensuring the highest standards of food quality and guest satisfaction. The Executive Sous Chef is trained in all aspects of food and beverage operations, capable of managing the entire operation in the absence of the Executive Chef, and is considered an Executive Chef in training.
**Responsibilities**
The Executive Sous Chef is responsible for daily food preparation in all areas where food is served at Brush Creek Ranch, including guest-facing culinary experiences. This role supports the Executive Chef by directing kitchen staff and handling all food-related concerns. Key responsibilities include:
**Culinary Leadership & Guest Experiences**
- Lead and conduct cooking classes, culinary demonstrations, and other interactive culinary activities for guests.
- Develop and represent all food, beverage, and service aspects of the department, fostering a culture of continuous learning and training with an emphasis on high-quality, fresh ingredients and seasonal techniques.
- Balance quality and profitability while creating memorable culinary experiences for guests.
**Staff Management & Training**
- Interview, hire, train, and manage all culinary staff as directed.
- Ensure the kitchen brigade is continuously learning and improving, following all standard operating procedures (SOPs) and directives.
- Mentor and develop associates for career growth and advancement.
**Operational Excellence**
- Maintain knowledge of and ensure compliance with local health department regulations, corporate HACCP, food safety SOPs, and federal guidelines.
- Organize, oversee, and manage all food preparation operations, ensuring efficiency and quality.
- Assist in creating and implementing menus, recipes, and preparation timelines.
**Financial Management**
- Execute all required accounting procedures, including managing the food and beverage checkbook, invoice processing, payroll, monthly inventories, and profit and loss critiques.
- Monitor food-related expenses and ensure budget compliance.
**Quality Control**
- Check the freshness of foods and ingredients, ensuring all recipes and portion use records are adhered to.
- Monitor guest feedback scores and work towards positively influencing rankings.
**Collaboration & Communication**
- Foster a climate of cooperation and respect between coworkers.
- Support the Executive Chef, Sales Department, Event Manager, and Front of House (FOH) teams in food and beverage marketing and sales programs.

Pay: $70,000.00 per year
