With a zero-loss mindset, the distillery operator will perform all duties related to milling, yeasting, mashing, fermentation, distillation, and barrel filling under minimal supervision in accordance with standard operating procedures and government regulations. Monitor boiler operations, respond to alarms and troubleshoot issues with maintenance support. In addition to the core responsibilities of the distillery, the distillery operators will unload grain, load slop trucks, prepare ingredients for R&D as needed, and perform daily, weekly and annual sanitation duties. This role will work overtime and/or alternate schedules to ensure coverage for planned and unplanned absences (including but not limited to vacation, leave, call-offs, etc.) as required.

Key Responsibilities:

Manage the full spectrum of distillery operations, including grain handling, milling, fermentation, and distillation.

Oversee boiler operations and work with the maintenance team to ensure smooth running.

Coordinate by-product management and tanker schedules.

Optimize distillery scheduling for peak fermentation and distillation efficiency.

Monitor operational metrics, troubleshoot issues, and maintain regulatory compliance.

Contribute to barrel management, including inspection, coopering, and loading.

Uphold plant cleanliness and tackle various tasks as the need arises.
What You Need to Succeed:

High school diploma or equivalent.

At least 21 years of age.

Keen eye for detail and autonomous work ethic.

Analytical prowess and decision-making skills.

Proficiency in mathematical calculations and Google Suite.

Physical ability to perform demanding tasks, work in varying conditions, and navigate heights.
Preferred Qualifications:

Experience in a distillery setting.

Degree in chemistry, biology, or a related scientific field.

Familiarity with Salesforce.
