Here at Carlo’s Bakery, we are introducing an Food Regulatory Specialist to our R&D Department as we are currently expanding. We are looking for an ambitious, self-motivated individual, with food science/regulatory experience, who has great attend to detail, organizational and time management skills. This role will work directly with the R&D team in supporting menu and product development, while ensure FDA and USDA compliance . In addition, this position will be based out of our Jersey City, NJ Headquarter. This is the perfect opportunity for someone looking to take the next step in their career and step into an R&D role.
Responsibilities
· Create and maintain product specification sheets for Carlo’s Bakery products
· Maintain active product list with specifications for each product to be shared with all departments.
· Update and maintain nutritional database and corresponding ingredient specification information using PRIMS, NutrAL, and FlexiBake R&D software
· Coordinate sensory evaluations and organize testing panels to gather feedback on product market performance
· Conduct finished product packaging audits against ingredient specifications, R&D software databases, and label approvals
· Monitor and interpret relevant laws, regulations, and guidelines to ensure compliance with FDA & USDA regulatory requirements
· Work closely with different departments as part of a cross functional team (Production, Quality Assurance, Marketing, Procurement, Operations, Logistics, Warehouse)
· Understand proper use of all equipment: ovens, mixers, sheeters, scales, walk-in refrigerators and freezers
· Uphold HACCP and SQF / GMP guidelines, working with the R&D department head and QA department to maintain compliance throughout our facility through regular inspections
· Research, select and test new raw materials and ingredients to be used in Carlo’s Bakery products.
· Formulate and adjust product recipes and specifications to optimize consumer appeal while maintaining optimal profitability and production line performance
· Conduct shelf-life studies, perform microbes and hydration testing on all products
· Perform other job-related tasks as directed by the department head, manager and other team leaders.
Qualifications
· Bachelor’s degree in Food Science, Nutrition or a related field preferred
· Minimum of 1-3 years of experience in the food industry with a focus in nutrition labeling and/or regulatory, quality assurance, research & product development
· Knowledge of FDA & USDA nutrition labeling regulations
· Background in baking and pastries preferred
· Demonstrated knowledge in food handling practices such as GMP, SQF and HACCP
· Demonstrated ability to work effectively both independently and within a team environment
· Strong analytical skills and attention to detail in both experimental design and data analysis
· Excellent communication and organizational skills to manage multiple projects efficiently
· Strong organization and follow-up skills, and the ability to work under tight deadlines and changing priorities
· Strong working knowledge of Microsoft Excel, Word, PowerPoint, SharePoint, etc., and overall computer literacy
· Ability to perform moderate physical work over prolonged standing periods, able to lift up tp 50 lbs.
