Under direction of the Executive Culinary Team, this individual will be responsible for effectively supporting all culinary operations. Line Cooks are responsible for supporting kitchen operations by assisting Chefs and other kitchen staff. This is a part-time, event-based position located within the Food and Beverage Department of Legends at Pechanga Arena. Hours for this position fluctuate depending on event schedule.
Examples of Essential Duties/Responsibilities:
· Complete daily Time and Temperature logs for your station.
· Ensure accurate labeling, dating, and rotating using the FIFO method for all raw and prepped food products.
· Practice proper work procedures, safety, and sanitation standards
· Follow recipe guidelines to prepare food based on the current concession menu concepts.
· Engage with guests, as well as team members to ensure exceptional hospitality is always provided/ received
· Maintain food temperatures, food quality and appearance of prepared food to our established standards.
· Have knowledge of all menu items, ingredients and how prepared
· Be comfortable with the stadium and know how to navigate personally, as well as assist guests.
· Support any other Food & Beverage concession and premium departments as needed.
· Timely execution of station requirements to specification of Executive Culinary Team
· Follow recipe guidelines to prepare food based on the current menu and concession partners.
· Executing start to finish recipes for concessions, premium, catering, special events plus bulk production.
· Other responsibilities and tasks as deemed appropriate by the F&B management team
· Must maintain a friendly, positive attitude and a professional demeanor always.
· Able to follow recipes and cook them to desired specifications for both concession and premium locations, plus bulk production.
· Knowledgeable of basic knife skill and production techniques, including pastry production.
· Able to work open action stations while servicing guests in upscale environment.
· Shows a willingness to learn.
· Maintains and abides by County Health/ Sanitation as well as Legends Hospitality standards.
· Able to multitask in a fast-paced environment.
· Always maintains positive guest relations.
· Ensures that only the highest-of-quality product is served to our guests.
· Provides efficient service and quality products by following direction of culinary management.
· Ensures that all equipment is in proper operational condition and is cleaned on a regular basis.
· Shows flexibility by rotating to other service areas concession and premium locations when necessary.
· Execute opening and closing procedures.
· Performs other related duties, tasks, and responsibilities as assigned by management.
Specific Qualifications/Abilities: The requirements listed below are representative of the knowledge, skill, and/or ability required.
· All applicants must be at least 18 years of age.
· The ideal candidate will have a minimum of 1 year cooking experience in the foodservice industry, preferably in premium services, catering, and concessions environments for a sports and entertainment venue
· Basic Knife Skills

· Strong commitment to delivering a high level of customer and client service with demonstrated initiative and culinary skills
· Customer service oriented with the ability to interact with all levels of management
