We are seeking a skilled and dedicated Assistant Winemaker to join our dynamic team. As Assistant Winemaker, you will work closely with our Head Winemaker to oversee all aspects of the winemaking process, from grape harvest to bottling. Additionally, you will play a vital role in vineyard operations and maintenance, ensuring the health and vitality of our vines.
**Responsibilities:**
- Assist in all stages of winemaking, including grape sampling, crushing, pressing, fermentation, blending, and bottling.
- Conduct routine analysis of wine samples to monitor fermentation progress, acidity, sugar levels, and other key parameters.
- Maintain accurate records of winemaking activities and cellar operations.
- Operate and maintain winemaking equipment and machinery.
- Participate in sensory evaluations and blending trials to ensure wine quality and consistency.
- Assist in cellar organization, inventory management, and cleanliness.
- Collaborate with vineyard and cellar teams to ensure seamless integration of fruit into the winemaking process.
- Participate in vineyard work such as pruning, canopy management, irrigation, and pest control.
- Conduct vineyard assessments and monitor grape ripeness to determine optimal harvest timing.
- Assist in vineyard maintenance tasks, including trellis repair, vineyard infrastructure upkeep, and soil management.
- Uphold quality control standards and adhere to safety protocols at all times.
**Requirements:**
- Bachelor's degree in Enology, Viticulture, Food Science, or related field preferred.
- Minimum of 2 years of winemaking experience in a commercial winery setting.
- Strong understanding of winemaking principles, techniques, and best practices.
- Proficiency in basic lab procedures and analysis.
- Excellent sensory evaluation skills and attention to detail.
- Ability to work effectively both independently and as part of a team in a fast-paced environment.
- Flexibility to work long hours, weekends, and overtime during peak harvest periods.
- Forklift certification and knowledge of cellar operations are desirable.
- Passion for wine and a commitment to quality and excellence.
